OVERNIGHT QUINOA & OATS PORRIDGE WITH MIXED FRUITS

So let’s see… what do we have in this delightful little bowl…

Ingredients:

  • ¼ cup large organic rolled oats (gluten free if needed)
  • ¼ cup cooked quinoa
  • ¾ cup unsweetened almond/organic soya/other dairy-free milk
  • Raw vegan protein powder (optional)
  • If you wish to add a sweetener use stevia, maple syrup, or coconut sugar
  • ½ banana, mashed
  • 1 tablespoon ground flaxseed or chia seeds
  • ¼ cup raspberries
  • ¼ cup blueberries
  • ¼ cup diced peaches
  • 1 tsp cinnamon

Preparation:

  1. In a medium bowl combine oats, quinoa, protein powder, ground flax or chia seeds, cinnamon, and stevia or maple syrup. Stir to combine.
  2. Add in the mashed banana, berries, and peaches.
  3. Pour in the dairy-free milk, and mix ingredients together.
  4. Place in the fridge and leave overnight.
  5. In the morning, remove from the fridge, heat on the stove top or in the microwave, or enjoy cold!
  6. If you find the mixture is too thick in the morning just add in some extra almond milk.
  7. Get creative with toppings… add nut butter, nuts, seeds, more fruit like more banana, coconut, etc!

  • 1 cup canned coconut milk
  • 1 cup cooked wholegrain brown rice
  • 1 mango
  • Cinnamon, to taste
  • Optional stevia or maple syrup to sweeten
